    Made 1 alarm vegetarian chili this morning that simmered all day. I do it by leaving the grain portion out (rice in my case, some use barley or other grains to complete the protein) because it takes a lot less space to store if I add that in at meal time.

    Made up a bowl of lettuce & other salad bunny food, and spooned the chili & a little rice on top. Add a few shakes of taco sauce drops and it was yum city.

    Got the idea long ago from Wendy's; then they changed the name to Baja Salad, now they've simplified it a bit and it's Chili Salad I think.

    When we lived in Puget Sound we often enjoyed different formulations of fish tacos. Take them out of the shell and expand a little, and you've got seafood salads. I've enjoyed them with tuna, wild salmon and a local modest-upscale restaurant often has local walleye salad.

    I think I'll have at least two salad meals this week for sure, another serving of taco salad from my frozen leftovers, and I'm getting a hankerin' for salmon salad. Maybe grilled planked salmon.

    •  As a birthday present to myself, I bought a (8+ / 0-)

      small container of smoked salmon salad at our local fishmonger that I have been eating on all week. I eat it on a demi sourdough loaf toast slices or pita crackers from Trader Joe's, or rolled up in a lettuce leaf with some veggies. Just nice to have something decadent once and a while.
      I think it consists of flakes of smoked salmon, cream cheese, maybe sour cream and minced white onion. I think I'll try to make it myself. I might add some minced chives and other things I am thinking about.
      Your taco salad sounds really nice. I'll have to try it.
