  •  I had to cook for a lady with gluten intolerance. (8+ / 0-)

    All recipes were altered by use of different flours for baking. She had every kind. There's rice flour, corn meal, quinoa flour, almond flour, tapioca flour, oat flour, millet flour, arrowroot flour, potato flour, and quite a few other types.
    Bob's Red Mill make gluten-free all-purpose flour and many other baking mixes. I think it's a blend.
    I made lots of kinds of potato casseroles with cheese for the lady.

      I'm on a slow carb diet and have been looking for other options for dredging. Thanks for the info.

      carry alternative flours in with organic food sections, or maybe some other section outside the regular baking isle.

      If you're not worried about gluten there are lots of choices. But all other flours will have much less gluten than wheat. This makes bread for example a problem if you need it to be structural. I was never able to find a wheat free bread that was very good for eating sandwiches while driving a car. They were always too crumbly for that.

      Otherwise, gluten-free baking recipes will show you how to use a few additives with lower gluten flours to make baked goods, pancakes etc.

      Of all brands there is a Betty Crocker gluten-free pancake mix we loved, we found it by accident in one very ordinary supermarket that had it in the main isle with the other pancake mixes. It worked better than several brands carried in specialty sections or organic food stores.

      garbanzo-fava), sorghum flour, spelt,kamut, teff, Minnesota wild rice (there's a proprietary name for this new one but I can't find the right cookbook, argh)

      among still others, probably!

      "real" work : a job where you wash your hands BEFORE you use the bathroom...
