    with both hands tied behind your back. Seriously, nothing could be simpler.

    First of all, I didn't catch the fish which means that I didn't have to clean it although that would only have added a couple of minutes to the preparation time.

    This particular fish came with the head on and I don't even bother to cut it off so long as it fits in the baking dish. Why bother?

    Start by slicing a lemon and chopping some parsley and grinding some fresh black pepper.

    Select a nice heavy baking dish of some sort. I use an oval enameled cast iron baking dish which is just the right size to hold a couple of trout.

    I salt/pepper the fish on the inside and out and I pour about a tablespoon of olive oil in my baking dish and add the fish. I put two or three lemon slices in each fish and pop them into a 375 degree oven for 15-20 minutes depending on the size of the fish.

    Check the temp of the fish with a quick reading thermometer. They are ready when the thermometer registers 125 degrees.

    Transfer the fish to a plate and garnish with lemon slices and parsley.

    Easy-Peazy. Takes no more than 30 minutes from beginning to end.

    Having your hands tied behind you might present a problem, but I'm pretty sure you could do it blindfolded.
