Last time I checked, the respecting of religious beliefs of your employees has to do with work rules and the work environment (i.e., if people are offended by the office "Christmas" party, or if you don't let an employee off to celebrate Rosh Hashanah), and not the day-to-day functions of your company.

If an employee's religious beliefs conflict with the actual duties of their job description, that is their cross to bear (no pun intended) and not the company's.  The only time you can recuse yourself from something is if your religious beliefs create a bias in you that will prevent you from undertaking the task properly.  I'm thinking of innocuous things like a Friday's waitress who is a Jehovah's witness and can't sing "happy birthday" to a table -- there are other waitresses there who can; you don't send them to another restaurant to get their birthday song.

Good diary, and good for you for following up!
