Good French Champagne that is fermented in THIS bottle will last for a long time. The bubbles get smaller with age. That makes it tickle your noise better. "Champagne" that has a bottle cap needs to be drunk weeks after bottling :) The bubbles come from the CO2 container next to the bottling machine.

a tale from a wine course I took a few years ago. The teacher said that one day, a guy came with a question about a 1966 Dom Perignon he kept for a special occasion. He had to inform the poor guy that he could open his bottle and just empty it in the sink.
I'll always remember something else he said to the guy: "Sir, death is a special occasion. There is never a wrong occasion in life to enjoy a good bottle"
