universities.  You have a very large public university in your area that puts a lot of effort into helping students with disabilities.

Even though your need for some sort of second income is very serious, you might try to disconnect it from finding something to give her a better sense of her self-worth.  Volunteering at a university which will help her get a degree might give her life something of a lift.  I'd think a university library would welcome the occasional volunteer, or their day-care center (they are sure to have one).  I'd start with their students-with-disabilities office.

...the hard part is going to a university in a basically redneck conservative area and try and get help because you are disabled, though not visibly so.  I can't tell you the number of times she has literally been chewed out because someone thought she was trying to take something from other "really" disabled people.

Though true, it wasn't at some of the more liberal universities.  But liberal anything in Houston is a rather comical concept.

People dealing with the disabled should certainly know better!

I wonder if having her medical records might help.

Do think of contacting the U of Houston.  She could consider trying to talk to the women's studies program, which will be familiar with women being dismissed because they don't fit into the standard categores.
