    This is a really simple one that I love:

    Saute onions, garlic, and whatever vegetables you want in butter -- mushrooms and chopped zucchini work well. Use a good amount of butter.

    Add salt, pepper, and whatever spices you like.

    Add a can of chick peas. You can either drain the peas first and ad a little water, or add a little of the juice from the can. Once the chick peas get a little cooked, add a few soup spoons of salsa. I've found that milder salsa works better.

    Cook until the peas are done. Serve over rice, if desired.

    Very, very fast meal, really good.

      Grate  around 1/4 lb. of cheese. Drain a can of red beans. Cook about 3/4cup of uncooked rice however you cook it - but if you don't have a proper rice cooker, the gods help you.

      place rice, cheese and beans in casserole pan. Add cumin, paprika and chili powder to taste (you can eat this raw, so taste freely, but it's better hot). If you like, diced onions, tomatoes and peppers can be added. You can also add things like celery or meat, but then you need to saute those things with the onions and peppers before adding them, and that's more work.

      Place in the over at 375% for 15 mins or until the cheese looks pretty melty. Serve hot. Serves 2-3 people.
