    This recipe makes the most intense PB cookies ever.  I tried them to humor a wheat-free girlfriend and I'm now addicted.

    Christina's Peanut Butter Cookies, a wheat free delight!

    2 Cups Skippy Creamy Peanut Butter
    2 Cups Sugar
    1 teaspoon vanilla
    1 egg
    Skor Toffee Bits

    Preheat the oven to 400 degrees. Mix all the ingredients together in a large bowl. Create teaspoon size balls on a non stick cookie sheet. Use a fork to make a criss-cross mark on the top of each cookie and place in the oven to cook for 10 minutes. Keep an eye on them, because you do not want to overcook them. They should look they are barely done. Let them cool on the cookie sheet for 30 seconds and gently take them off and place on a cooling rack.

      I've actually seen a recipe like that (PB, sugar, egg) in Gourmet magazine, which is not exactly a wheat free sort of publication, but the cookies are the most intensely peanutty cookies one can find. Who needs flour?
