    This comment reminded of my favorite, simple cooking tip over the past year.

    Make sure you stir the onions or shallots with some olive oil first -- otherwise, they'll burn

    On the NPR radio show "The Spendid Table" a caller asked the host for ways to prepare asparagus instead of just steaming it.  The response was an incredibly simple way of cooking the asparagus (I guess it is actually roasting it?) that really seals in the flavor.  I also find that I don't feel the need to add a dollop of butter on it like I do steamed asparagus.

    Pre-heat oven to 400°F - After cleaning and trimming the asparagus, lightly coat it with olive oil (I pour ca. 1-2 tsp into my hands and slather it on that way). - salt and pepper to taste - put asparagus on a cookie sheet and insert into oven for 10 minutes (I add an extra minute or so for particularly thick asparagus). - eat and enjoy

    It's incredibly simple and tasty.  The "Splendid Table" suggestion went on to include serving it with toast and an "easy" fried egg for a simple sauce.  The roasting technique is fine by itself, however, and I find I like asparagus done this way alongside some grilled salmon.
