      In an "at will" state, "at will" is the default.  The parties may voluntarily choose to limit their rights by signing a contract, including one with a non-compete provision.  The employee may benefit from being guaranteed access to confidential information, obtaining a definite term of employment, having the employer's right to terminate limited to "cause" or other bases, etc.
