    Chicken has always been the cheapest meat, and the easiest for folks with nothing to raise. All "soul food" has that in common, it's descended from what poor folks and slaves could grow themselves.

    Beans and cornbread is still my favorite meal behind dead pig over coals.

        In the Old South food was one of the Great Demarcations, Miss Liza-Better-Than-You ate beef, not because she preferred it but because it was a status thing. Poor folks, of any color, rarely had enough land to graze cattle, but keeping a few chickens or having a hog didn't take a lot of land.

        Same thing with your collard greens, Miss Liza would never stoop to keeping a garden.
