    good, and simple, cheat is this:

    sift a cup of flour with a half teaspoon of salt and 3 tbsp cornstarch

    put a stick of unsalted sweet butter in the freezer for 45 minutes, then grate it quickly with a box grater on the coarsest side

    mix the butter into the flour mixture in a bowl using a fork

    if the result does not stick together in clumps like fine gravel, sprinkle a tablespoon or so of ice water over it and very lightly pinch together by hand

    refrigerate the dough for 15 minutes while you:

    peel, core, and finely slice 3 big Granny Smith apples

    mix 1/2 teaspoon cinnamon with 1/2 teaspoon ground clove, 1/3 teaspoon allspice, 1/4 teaspoon ginger and 1/4 teaspoon nutmeg; add this, with 1/2 teaspoon good vanilla extract, to 1/2 cup water and pour over 1/3 cup white raisins. Rehydrate raisins in this mixture for 2 minutes on high in microwave.

    Press dough out in bottom of glass pie pan to cover bottom and sides. Don't leave holes in the crust.

    Line crust with a double layer of apple slices. Spoon in 1/2 the raisin mixture. cover with apples. spoon over rest of raisin mixture. cover with remaining apple slices.

    Bake at 350 F for 40 minutes. Serve warm.
