    They were my favorite part of holiday dinners when I was growing up, and now they're my own family's favorite.

    Scrub and bake Russet potatoes at 400 for approx. 45 min. Remove from oven and let cool until they can be comfortably handled. Cut in half lengthwise, scoop out the potatoes with a large spoon. Mash with your choice of milk, butter, sour cream, chives, shredded cheddar, crumbled bacon, salt, and pepper. Fill the skins with the seasoned potato mixture, sprinkle with more cheese and a little paprika. All this can be done as much as a day ahead. Thirty minutes before time to serve, place potatoes on baking sheet and put in 350 oven until tops are melted and browning.

      a few years ago, but they just came out sort of dry for some reason.  There used to be a restaurant in our former town that did them, and they were so good.  I don't know what I did wrong when I tried it.  Just not enough stuff inside the stuffing, I guess!
