    Potatoes LOVE roasted red peppers. I think it's the tanginess mixed with smokiness. Those baked potato wedges above are great with a ketchup-smoked paprika sauce. Also, get a jar of the roasted red peppers, or roast your own, then stuff them into your baked potato after cutting it open. They're so flavorful you can get away without using butter if you so desire.
