    I've sometimes used a box mix when in a time crunch.  The basic Duncan Hines yellow cake is quite good -- especially for coconut cake.

      The first boxed cake mixes to hit the market used powdered egg, so all people had to do was add water. How space age!

      But it turned out that consumers found the just-add-water approach to baking dull, and insulting to their kitchen know-how.

      Manufacturers responded by removing the powdered egg and instructing chefs to add their own eggs. This created a more psychologically pleasing baking experience for consumers.

        I generally base my mixing on all the egg being evenly dispersed.  If I were just adding water it would take much less time.  Still, you're talking about less than a minute.  You don't want glueten chains to form when you're making cake but you're bound to get some based on how long you mix it for.
