    would be that there wouldn't be enough torque in the food processor or blender.  I have to be careful when I make lentil burgers because at one point I process a mixture that contains a lot of tahini, which when thoroughly mixed has a texture somewhat similar to peanut butter.  If the mixture is too high a proportion of tahini and there's too much in the processor, the motor struggles.  Thick fluids like that create a lot of drag.

    Tahini could be worse than peanut butter, though; it has almost a corn starch "oobleck" effect (non-newtonian fluid) to it.  And it likes to separate a little bit into less viscous and super-viscous components.
