    My third elementary school did that. I didn't eat. Their idea of "healthy" was casserole-stuff with food all mixed together served with milk. I have autistic/sensory integration disorder traits. It wasn't going to happen. I didn't get much at home either those two years, what with my mother living on a grad school stipend that went almost entirely to the rent...but I've always preferred to go hungry than eat anything with mixed textures, and I never could drink milk.

    It is parents' job to get kids to eat healthy. If the school is going to feed them because they are hungry, the main thing is to feed them something that they will eat, not to try to impose some arbitrary moralistic ideal of what they ought to be eating. Sure, it's a good idea to get some nutrients into the kids, but only if they actually go in.
