    Thanks for the primer. As a foodie wanna-be I'm learning about how good "the real thing(s)" are. I've been making my own tomato sauce for pasta for a while now - was rushed for dinner last night and used pre-made - Bleh! I can't believe I used to like that stuff - all I could taste was the sugar (HFCS). My guess is that once you've gone over to home-made mayo and hollandaise you'll never go back.
    One quick question - for my dietary fat concerned wife (I should be concerned too) - can we scale back the recipies so the temptation to over-indulge will be reduced?
