  •  Just made for dinner the most amazing cucumber (5+ / 0-)

    salad with mustard seed.

    Diced english cucumber, 1/2 c peanuts food processed to between "coarse" and "fine," one (or less) jalapeno pepper, 2 tblsp lemon juice, 1 tsp salt, 1 tsp sugar. Mix together, check for taste (should be just a little tart), and then mound 1/8 tsp cayenne on top. Heat 1 tblsp canola oil to smoking, thrown in 1 tsp of mustard seeds (brown or black), cover quickly, and take off the heat when popping stops and pour directly onto cayenne (oil heats and flavors cayenne this way).

    It is really the most amazingly simple and delicious salad. Frequently a nice small dinner for me when I've been largely sans veggies during the day (like today). Doesn't keep well; you have to make fresh. But it doesn't take more than 5 minutes to make . . . [Especially with the "Alligator" food dicer; best invention since the wheel!]
