Technically anyone with light enough skin can define themselves is white.  The question is whether or not you want to minimize your ethnicity by doing this.
When a Jewish person walks into a restaurant the majority of the people sitting in the restaurant will think they see a white person not a Jewish person. Unless you talk about being Jewish openly this will be the perception that people hold of you.
My children are  light skinned.  Many white people think they are white kids with curly hair.   People of color always know my kids are bi-racial.  My kids will always identify with being African American- this is how we raise them.  Because if we don't and we encourage them to emphasize their whiteness not their AA roots then they will be in for a big surprise when they walk into a restaurant thinking people will treat them as the white kids they think they are.
Having said this I also love discussions about race, color, ethnicity.  Regardless of what people think of your diary at least you had the courage to bring up a gritty topic!

what the majority of people in a restaurant are thinking. Neither can anyone else. In my experience, most African American people see Jews as white, but that doesn't mean that white people see us the same way.

Here's a parallel: I never considered shades of color in black people-- African Americans were African Americans-- until I was working in an environment that was 90% African American, where people made distinctions between light-skinned and dark-skinned, and shades in-between. Likewise, white people may notice differences among white and "off-white" that African Americans might not.

assume the same thing about my kids.

But I think my husband and I are on the right track, when you ask my 2 yr old what color he is, he says, "I'm free."

That's my deepest wish for all children (other than food).
