    I haven't clicked the link yet, but the Rainbow Gatherings probably have great info on food preparation. A lot of the original members of my family ashram were into it.

    I think there was some legality about who served (this is very fuzzy now in my memory bank), but ultimately, you're probably quite right about sanitation. I'm fanatically clean, so if we were doing "serve yourself," I think it was because of legal scrutiny.

      go with sanitary. You get a chance to convince the Judge that the legal restriction was wrong, after the fact, but once you get people sick, there's no appeal.

        State Health code for temporary campgrounds mandates toilets within so many feet of each campsite. I insisted that the portapotties instead be clustered at spots along the perimeter, so that they'd not be within the range of flies commuting to food service areas, and the punpout truck would not have to go near individual camps. We didn't end up in court, as the State inspector agreed. "I guess you know more about doing this than our guys who wrote the regulations."
