    Who'da'thunk - it's a really tasty combo.  Smoky bacon, Dijon, nuts and mustard.  Try it - it is amazing.

    I used Gorganzolla.  Feta would work too, I bet.  Dried tomatoes and basil with tomatoes instead of mustard?  I bet the combos can be infinite.
