    ... first sautee three cups of onion, carrots and celery with a little olive oil in a large pot at medium high heat; after sweating the mirapoix for a minute or so add one and a half cups of chopped bacon and three diced medium-sized yukon gold potatoes, stirring occasionally as the bacon renders down a bit; after about three to five minutes, add three cups chicken stock and six cups water, add pepper and dried herbe de provence, (no salt, comes later; adding salt too soon toughens the beans) bring to a boil; add three cups dried, rinsed black-eyed peas and return to a boil, reduce heat and cover; boil at a low roil for fifteen minutes, then add two cups diced green tomatoes, one cup fire-roasted canned diced tomatoes, one teaspoon cajun seasoning, stir gently and cover; cook for another fifteen to twenty minutes; when black-eyed peas are done, turn off heat; add the juice and zest of two myers lemons and three table spoons of lemon thyme; add salt to taste.
