  •  You're welcome and I have a secret (4+ / 0-)

of my own.  Handle the dough as little as possible.

I'm not much of a baker and pastry and biscuits were never my long suit until my neighbor, who turns out pies and biscuits which could win prizes, told me to 'stop playing with the dough'.

So, I bought one of those wire things that cut shortening/butter into the flour, turn the dough out onto a marble surface (another investment which I love) and form it into a ball with as little touching as possible.

    Definitely try the scones :)

as possible, and to stir as little as possible as well. I think I kneaded for 25-30 seconds.

And we'll likely get a pastry blender (that wire thing).
