    employment is limited by statute.  In California, it's a law called "FEHA" -- the Fair Employment and Housing Act.  California Labor Code Section 12940 has most of the juicy stuff you'd want to read on this.  There are also limitations based on common law, leading to claims for "wrongful discharge in violation of public policy," or Tameny claims (after the case that introduced them.)  Employment at will is not absolute.
