      being potentially that simple...just add some chocolate and cinnamon to my usual chile. Hmm....I can do that...

        kind.  I get mine at a Mexican grocery.

          This close to Mexico, it's very easy to get just about anything one needs for any kind of dish from cuisines south of the border. We even have a local Thriftway chain (only a few stores) and the one here in Carlsbad is called "La Tienda Thriftway," which is kind of funny. (I'll note that Albertson's feels no need to refer to themselves as "The Albertson's Store," but perhaps they just have no sense of regional panache.)

          They have dried whole chile and all kind of interesting stuff in bulk in their produce section; that's where I go to buy onion sets in the spring, for instance... and a huge packaged spice section...star anise, you name it. Ground chile in all sorts of styles. Nice laid back store, often has great deals on produce too.
