    and wide open for your own personal likes/dislikes.
    4-6 Green, red, yellow, orange peppers, I usually use a combo
    2 med. leeks, chopped
    4-6  garlic cloves, mashed
    combo of white and brown rice, sometimes throw in some farro*
    any amount you want to feed your family
    2 Tbls olive oil
    2 Tbls butter
    mushrooms, combo of button, & cremini, I love shrooms, so I use tons!, chopped
    thyme, I use fresh, about 2 teaspoons, if dry, use less
    salt & pepper to taste
    pinch of chili flakes
    1-2 diced, seeded tomatoes
    diced combo of cheese, mozzarella, fontina, gruyere, parm, these are my favs, use what you like, I like mine really cheesey, usually about 3 cups total
    Veg stock

    *farro adds a really nutty quality, but it needs to be soaked ahead of time

    Saute the leeks and garlic in the oil/butter until slightly softened.  Add mushrooms and cook until mushrooms have rendered all their moisture.
    Add the rice(s) and saute until the rice becomes shiny, you may have to add a little more oil add farro if using.
    This is a good time to splash in some white wine if you want!
    Toss in thyme, chili flakes (careful) and the diced tomatoes.  Add the veg stock just to cover.  Cook slowly add more stock as needed until rice is cooked, method is sort of like risotto.
    Remove from heat, add diced cheese.  Stuff peppers, any remaining rice can be used to surround the peppers, it is yummy alone and also helps hold up the peppers.
    Bake at 350 until peppers are soft and cheese is gooey.
    Filling can be used in tomatoes, squash, any veg you like.
    Save a little of the veg stock to add moisture to the rice around the peppers if you want some softer rice.

    I made enough of these one year for a high school function, they went faster than the In & Out burgers!
