    for Aïgo Boulido - Garlic Broth.

    2 c water
    6 cloves garlic
    2 fresh sage leaves, minced
    2 tsp. extra virgin olive oil
    salt and pepper, to taste

    Place water and garlic together in a saucepan.  Bring to a boil, reduce heat and simmer for 20 minutes.  Add minced sage and simmer for an additional 20 minutes.  Remove from heat.

    Spoon out garlic and transfer to a mortar (or bowl).  Add olive oil and a bit of salt and pepper and grind with a pestle (or mash with a fork) into a paste.  Return to pot and season as necessary with salt and pepper.

    In and of itself, this is a wonderful broth to sip on when you are under the weather.  You can add some fresh grated parmesan for additional flavor.

    As a starter or a light meal, boil some fresh tortellini in the garlic broth for a Tortellini en Brodo.  Delish!
