      of ensuring good carbonation in a long-aged lager by adding wort back in after full fermentation to drive up the carbonation. So though I don't know if most Pilseners today use the process, I would bet that most of the old school ones do.

        Our troop of Fraternity brothers learned the process of krausening during the tour.

        We also learned the Blatz was not krausened, but that was the only difference from Old Style.

        During the night we learned that Blatz is krausened after ingestion.

        Now I'm thirsty...

      Krausening isn't particular to pilsners.  Some are, some aren't.  It can be used in any bottom-fermented brew, IIRC.  in fact IIRC the technique can be used in top-fermentaion too.  It's a step a brewmaster can use or omit as per his preference.  IIRC, hat is.

      Stop. Stand up. Make a sign. Walk around in public. Be polite and orderly and the rest takes care of itself. Want to shake up the Plutocrats? Demonstrate your attention to politics.

        I just added priming sugar. Not "kosher" according to the old German Rheinheitsgebot rules, but it does the job quickly and cheaply.

        I am sure all German lagers which are sold commercially that have much carbonation (some Bocks have very low carbonation) are krausened. In the USA, probably most aren't. It's a fancy way of doing what can be done easily with some sugar or malt syrup, both in home brewing and commercial brewing.

      But not all.  As i understand it, it is an optional step for any bottom-fermentaion beer, not just pilsners.  It might be used in top-fermentation too.  I'm not a home brewer and it's been awhile since I read about these terms.
