    (eat that four times a week).  Kabocha squash is a big favorite in the house.  Do you eat tindora (what my relatives call kovakkai)?  That's excellent, too.

    The nice thing about south Indian vegetable (and sambar) recipes is how adaptable they are: the same base, with slight alterations, works for lots of stuff.

    My mother-in-law does tend to use much less dal for vegetable dishes than I find in cookbooks.  I don't know if that's regional or a family idiosyncracy.
