    It was odd to see Bittman make it sound like the choices were burgers or rice and beans, which make such a mess on the grill.

    Certainly anyone who is going meatless only part of the time, whether it's Mondays or weekdays or whatever, will have no trouble shifting their meatless day to Tuesday or skipping it for a week like Bittman suggests.

    But the 4th of July, unlike feast holidays with a more rigid menu like Thanksgiving, allows plenty of room for meatless options. And because of the more casual atmosphere at many gatherings, it's easy to go veg without causing a fuss.

      there are lots of options like potato salad or beans (assuming they're vegetarian, which isn't always the case), corn, or various salads, the condiment plate, etc. Really, if it is just the stuff that goes on the grill, there are the obvious standbys like Boca Burgers or veggie hotdogs. I don't really like fake meat foods myself.

      So I guess PORTABELLAS would be my choice!
