Hey guys, what are you cooking for dinner tonight? I had the urge to do something traditional tonight, so it's roasted herb chicken breasts with goat cheese mashed potatoes. It's that sort of stick-to-your ribs kind of dinner. Here are my recipes below.
Herb-roasted Chicken Breasts
- 2 bone-in, with skin on chicken breasts (I usually remove the ribs in order for the chicken to roast faster).
- 3 garlic cloves, minced.
- 3 tablespoons butter, softened
- Sea salt.
- Coarsely ground black pepper.
- Extra-virgin olive oil.
- Few sprigs of thyme, with the leaves torn off.
- A handful of parsely, finely chopped.
Mince the garlic, throw in the thyme, the chopped parsley, and the softened butter. Mix well. Then debone the chicken breasts, loosen the skin, and spread the softened butter all over the chicken breasts underneath the skin. Massage breasts well.
Grind some salt over the chicken breasts. Add in a few grindings of black pepper as well. Sprinkle chicken breasts with olive oil.
Put in oven at 400 and let roast for about twenty-five minutes. Check for doneness, remove from oven, and turn on the broiler on. Then broil chicken breasts until the skin has crisped up nicely. Serve to guests with drool coming out of the side of their lips and say, "Bon Apetit!"
And for my goat cheese mashed potatoes is the recipe below:
Goat Cheese Mashed Potatoes
- 4 oz garlic herb goat cheese.
- 1 stick butter left out on counter to soften.
- 1 bag yukon gold potatoes, peeled, and quartered in halves.
- 1 cup milk.
- Salt and pepper to taste.
After peeling the potatoes and quartering them, put them in a pot of water to boil away. Leave the butter and goat cheese on the counter to soften. In about half an hour, the potatoes should be ready to be mashed. Add them to the KitchenAid mixer bowl, and put in about a cup of milk, the softened butter, and mix at about 2 speed for a few minutes. You can add in the goat cheese, and more milk if the potatoes are still a bit rough. Add salt and pepper to taste.
Serve to hungry guests as well, and remind them not to lick their plates clean as that would be very bad manners.
