What are you guys going to make for dinner tonight? Any of you going to do it the frugal way like in noweasels's diary about doing food and grocery shopping? Or even better, doing it the more extravagant way? I'm taking the former, not the latter tonight for dinner.
I'm planning on making chicken quesadillas. I have some chicken tenders that I'm planning to do a quick saute, and then a rough chop before adding to a flour quesadilla that has spinach, pico de gallo, and mexican cheese blend. It may not be extravagant, but it helps use up the huge bunch of spinach that I got at Central Market here in Austin. And there'll be plenty of leftovers for lunch for my fiance, mr.slinkerwink, to take to work tomorrow.
I used some of that spinach in an omelette which I broiled in the oven with half a roughly chopped tomato, some garlic, and mexican cheese. It was so good! I guess I'll call this week the Spinach Week since the ingredient itself has featured so prominently in my dishes.
And for dinner tomorrow night, I still have to use up more of that spinach. So it's going to be pasta with chickpeas, spinach, lots of garlic, roughly chopped bacon, and canned San Marzano tomatoes. A healthy pinch of crushed red pepper flakes and some salt and pepper should help make that pasta absolutely amazing! Oh, and the parmesan cheese too at the end. It's one of my favorite pastas to make as in it is very extremely filling and lasts for about three days in terms of leftovers.
So what are your favorite recipes to make with spinach? I still have a lot left after the amount I've planned to use on the pasta. I need your help! Heh.
