Daily Kos

Daily Kos meetup at my place today

Sun Apr 13, 2008 at 04:37:44 PM PDT

Wow. It was great. Nice to put some faces with some names.

I am sure that Jetskreemr will have some (incriminating) pics of my messy kitchen haha.

It was wonderful. I had fun. I hope you did too.

Too bad lovely Rosebuddear is too shy to come out for company. Although she DID show herself early on in the party and then ran and hid haha.

Thanks for attending everybody. It was really great.

Thanks Jetskreemr for organizing, and thanks rosebuddear for hosting - helped dispel the gloom of the national race, and was fun to put some faces with names.

Posting a recipe feels like the old days of responding to trolls! It is straight out of Molly Katzen's Enchanted Broccoli Forest cookbook, which has one great recipe after another.

      Oiled 13 x 9 baking pan
      Preheat oven to 350

1 lb of fresh spinach (it's a lot of spinach)
      3 tbs olive oil
1 medium onion (1 cup) minced
      1/4 cup sunflower seeds
      1/2 cup grated parmesan
      1 cup pesto
      2 lbs ricotta
1 lb mozzarella (thin sliced, not shredded)
      salt and pepper
20-24 lasagna noodles (I use fresh; if using the hard kind, you'll need to drop in boiling water for two minutes before assembling)

      1. Chop spinach - I do this with a food processor slicing blade
      1. Saute onion in 2 tbs oil until soft; salt and pepper
      1. Stir together in large mixing bowl spinach and onions; then add sunflower seeds, pesto, 1/4 cup parmesan, and ricotta, and mix thoroughly. Pepper generously.
      1. Assembly: a) 1st layer of noodles; b) 1/3 of spinach mixture spread evenly; c) 1/3 of mozzarella; d) 2nd layer of noodles; e) 1/3 of spinach mixture; f) 1/3 of mozzarella; g) 3rd layer of noodles; h) last 1/3rd of spinach mixture; i) last 1/3rd of mozzarella; j) last layer of noodles; k) sprinkle top with 1/4 cup of parmesan and drizzle with remaining tbs of oil.
      1. Bake, covered with foil, at 350 for 35-40 minutes.

      Cheers!

thanks for posting the recipe. I can't wait to make it! I think the hubby might even like this one(not terribly fond of dishes w/o meat but he's been known to like some...), we shall see ;)

And thanks for posting that lasagna recipe, tangoasg!!

    That was indeed yummy stuff.

Mom to Miss M, it was really nice to meet you. I very much enjoyed talking with you. (I enjoyed talking with everybody, but I thought we in particular had a great conversation).

Hey, Big E, caught your blog roundtable on the RADIO tonight. Very cool stuff. I enjoyed that segment a great deal.

Ok, you guys are gonna love this. My 76 year old Mom called me today, AT WORK. She said she was worried about me. I asked why. She said well, you know, you hosted this party for a bunch of people you didn't know, all those "Internet people". OMFG. Like I guess you were all there to case the joint and rob me in my sleep. Spare me. (Mom's sort of a nominal Democrat, but she still has those Republican tendencies haha).

Yeah right, you guys are about as dangerous as a basket of puppies. :):):)

So now you know my Mom was worried about me hanging with dangerous felons all day Sunday. hahahah.

SIGH. I love my parents, but MAN. I pointed out to my Mom that I am one of those "Internet people" also, and so is my fiance. She goes, "well I'm just glad it went well dear." OMG haha. Yeah it went well Mom. Nobody tried to steal the silver or make off with the computer. hahaha. And nobody was raped or murdered or anything. Just had some really good food. Good lord.

I hope you all had fun. I sure did. And you know, Jetskreemr was right. :):) Everybody hung out in the kitchen, and I didn't even need those extra chairs.
