Yes,it was one year ago today that we first began meeting here on Monday evenings to discuss the many advantages of a vegetarian diet including; better health, animal rights, global food crisis,frugal living and protecting the environment.
Today I will link to Patriots Daily News Clearinghouses' important diary Water bankruptcy possible W/in twenty years which gave frightening evidence of the state of our planets fresh water supply within twenty years. Global food production will be greatly affected by the water shortages.
That dire prediction is not inevitable. There are steps that can be taken now to prevent that consequence. There are remedies available by changing the the balance of our agricultural products. We already know that livestock production is the greatest contributor to global warming But did you know that livestock production is also one of the greatest uses of fresh water?
To produce 16 oz of soy requires 220 gallons of water
To produce 16 oz of red meat requires 2000 gallons of water
Meatless Monday has done a study on the use of water in livestock production. By getting the protein in our diets by plant rather than livestock we can greatly reduce our indirect consumption of water
I was inspired to create this series by former Beatle and vegetarian advocate Paul McCartney(Macca) who partnered with the Meatless Monday campaign to promote less consumption of meat. We don't just talk about the advantages of a veggie diet we also do some cooking, share recipes and listen to some great Beatle/McCartney music!
Tonight Macca's Meatless Monday is celebrating our one year anniversary on this hot summer night by serving up popsicles for all! Living in Florida popsicles are a staple for me. At times,I even have one for breakfast. I make them myself and have put together some of my favorite recipes for you.
ESPRESSO FROZEN POPS
You too can have a popsicle for breakfast!
In a pitcher, combine 2 cups brewed espresso or very strong coffee, 1/2 cup of chocolate syrup,6 Tablespoons of sugar, 2 teaspoons vanilla extract, and 6 Tablespoons of milk (or soy milk,rice milk etc.). Pour mixture into 8 pop molds. Insert sticks and freeze until solid.
(variation: for Mexican Mocha Pops add 2 tablespoons Kahlua and 1/4 teaspoon cinnamon to mixture)
MEXICAN FRUIT POPS
In a measuring cup with spout combine 2 scant cups of peeled fruit of your choice (such as pineapple, papaya, bananas, strawberries) coarsely pureed with 1 to 4 tablespoons superfine sugar and 1/2 to 2 tablespoons fresh lime juice (adjust sugar and lime juice to taste)
Stir until sugar is dissolved. Fill molds leaving about 1/4 inch to allow for expansion. Set lids if using and insert sticks. Freeze until firm (a couple of hours)
WATERMELON LEMONADE ICE POPS
In a food processor puree 2 cups (packed) finely chopped seeded watermelon, 3/4 cups frozen lemonade concentrate (half of a 12 ounce can),thawed, 3 Tablespoons sugar and a pinch of salt.
Divide mixture among 8 ice pop molds. Cover and freeze until firm ,at least 4 hours.
MARGARITA POPS
Since we're celebrating here goes...
Great summer dinner party dessert!
3/4 cup sugar
3/4 cup fresh lime juice
1/2 cup water
2 tablespoons fresh lemon juice
2 tablespoons fresh orange juice
2 tablespoons tequila
2 tablespoons orange liqueur (recommended: Grand Marnier)
lime wedge (1/6 of cut lime)
Kosher salt, for garnish
Special Equipment: 4 small cups (recommended: Dixie), 4 popsicle sticks
Directions
Combine sugar, lime juice, water, lemon juice and orange juice in a small saucepan over medium heat. Cook, stirring, until sugar dissolves. Remove from heat and allow to cool. Once cool transfer to a blender with tequila, orange liqueur, and lime wedge and process until smooth. Pour into the cups and cover the top of each cup with foil. Place the popsicle stick in center of cup (down through foil, which will hold it in place). Freeze until hard, preferably overnight. Remove from freezer and run cup under warm water to loosen popsicle. Garnish with kosher salt and serve.
