This has been a tough week for me weight wise. I’ve had two birthday parties, and when someone makes a birthday cake for you, who can’t eat it? With different social events, it’s been difficult to stay on track. Then I made chocolate chip cookies for the folks who just moved in next door, and then it didn’t look like they were home, and then I didn’t think the cookies tasted that great, so I didn’t bring them over, so guess who’s been eating them? I did finally throw out the batch, if they aren’t good enough for the neighbors, then they aren’t good enough for me.

Here is a recipe for vegetable soup which is healthy, filling and low in calories.
Vegetable Soup
2/3 cup slice carrot
½ cup diced onion
2 minced garlic cloves
1 ½ tbsp olive oil
3 cups fat-free broth
1 ½ cups diced green cabbage
½ cup green beans
1 Tbsp tomato paste
½ tsp dried basil
¼ tsp dried oregano
¼ tsp salt
½ cup diced zucchini
Saute the carrot, onion and garlic over low heat and 1 ½ tbsp olive oil until softened, about 5 minutes. Add broth, cabbage, beans, tomato paste, basil, oregano, and salt, bring to a boil.
Reduce heat, simmer, covered, about 15 minutes or until beans are tender.
Stir in the zucchini and heat for 3-4 minutes.
Serve hot.
I love this recipe! I am not a fan of cabbage but it tastes yummy in this recipe. I will sometimes make a double batch and eat all week for lunch.
One way to lose weight is to eat foods that fill you up but are relatively low in calories. Most vegetables fit in this category.
