as cooler weather approaches, it's time to start thinking about heart soups and stews and bean dishes are a great starting point. Cheap, rich in nutrients and fiber and so easy to cook, beans and other legumes are an almost perfect food.
But what about the social aspect? Beans can cause flatulence, which can be a bit embarrassing. Well, I've discovered that the more beans you eat, the less you toot, which kind of puts to lie the schoolyard chant.

Basic bean recipe
Wash and sort beans
Put in crock pot
Chop an onion and peel some cloves of garlic
Water (use boiling water if you are in a hurry)
Now, I like to add all sorts of stuff depending on what I have on hand. Black beans are greatly enhanced by a bunch of diced celery and grated carrots, here in Mexico, I cook a yellow bean called Flor de Mayo with smoked pork chops. Never add salt until the beans are almost soft.
I object to bean recipes that call for soaking the beans and discarding the water. You are throwing away flavor and nutrients.
