Many moons ago, I wrote a diary (back when diaries were diaries and not diaries) with a recipe for my favorite dessert: pineapple Sprite cake. As you may know from my last Top Comments diary post, I've sworn off desserts. But today is a special occasion - it's my boyfriend's and my one-month anniversary. At the risk of looking like junior high schoolers, we're celebrating it. And I'm marking the end of one of the best months of my life with an appropriately fruity cake, which we're going to eat tomorrow when we see each other.
This occasion calls for nothing but the best: a pineapple Sprite cake. And I'd like to teach you how to make one, too.

First, I must inform you that this is an award-winning cake you're about to witness the making of. If you don't believe me, check this out. That's right, first place at the Warren County (Pennsylvania) Fair. Ohhhhh yeahhhhh.
I'm sure gizmo59 and tobendaro will back me up on the cake's yumminess, as they had some at the NW PA Kossack gathering on January 9. And they both took an extra slice!
Okay, so are you ready? Let's get baking!
The cake part of the cake is pretty easy. Here are the ingredients you'll need:
As you can see, you'll need a box of pineapple supreme cake mix, a box of vanilla or lemon pudding mix (I used to prefer vanilla, but now I prefer lemon - both are good, though), 3/4 cup of vegetable oil, 10 ounces of Sprite, and 4 eggs.
Put the cake and pudding mixes, the oil, and the Sprite in a large bowl.
Mix well. An electric mixer really helps, but I kick it old school and use a spoon. (burns more calories!)
When it's mixed pretty well and most of the lumps are gone, crack an egg into the bowl.
Mix the egg in well. Repeat for the other three eggs. Work out any remaining lumps. You should be left with a nice, smooth batter. Try to resist the urge to taste it!
Then, grease a 9x13 inch cake pan.
Pour the cake batter into the pan.
Level it out so it's evenly spread all over the pan.
Voila! Pop it into the oven at 350 degrees Fahrenheit and time it for 30 minutes.
While the cake is in the oven, make the topping (arguably the yummiest part of the cake). Here's everything you'll need:
You'll need 3/4 of a stick of margarine, 1-1/2 cups of granulated sugar, 2 tablespoons of flour, 11 ounces of (undrained) crushed pineapple, 2 eggs, and 1 cup of coconut.
To make your life easier, put the margarine in a small bowl, cut it up, and microwave it so it's melted.
Then, put the margarine, the sugar, the flour, the pineapple, and the eggs in a large saucepan.
Mix the ingredients well.
Put the saucepan on the stove and cook over high heat, stirring constantly. It shouldn't take too long to start boiling. When it starts to feel thick, remove the saucepan from the heat. Don't fret over the thickness too much - that's a good way to burn your topping. It shouldn't be on the stove for very long. Besides, once you mix in the coconut, it will thicken even more.
When you remove the topping from the heat, pour in the coconut. A cup is the minimum - sometimes I put in two cups.
Mix well.
And voila! There's your topping.
While you wait for the cake, don't cave to the temptation to try the topping. You won't be able to stop. Pretty soon, you'll be eating a bowl of topping. Not that I'm speaking from experience or anything...
By now, the 30 minutes on the cake should almost be up. When the cake has been in the oven for 30 minutes, check it with a cake tester or a toothpick. As you can see, it's not quite done.
Put it back in the oven for 10 or 15 more minutes - that should do it.
And...there we go.
The cake is done. Now, pour the topping on the hot cake.
Spread it out evenly over the cake with a rubber spatula.
You might notice egg whites in the topping. They won't hurt, but for the sake of appearance, you might want to carefully pick them out with a fork.
The finished cake should look like this:
That's it! That's my award-winning pineapple Sprite cake.
Oh, but wait! Since this is a one-month anniversary cake, I'm trying something different.
A pineapple chunk heart! Awwwww! Don't judge...
Now that the cake is done, you might be tempted to cut a slice and eat it. Don't! It's good hot, but it's much, much, much better cold. So put the cake in the refrigerator, preferably overnight, and enjoy when it's nice and cold. I guarantee you won't be eating just one slice.
