Sadly cooking has not recommenced at my house yet, but I did want to give you guys another cooking diary. I've got a few projects photographed that I've held back. :)
Not too long ago, my husband went to the store and bought fresh mozzarella by mistake when I was making pizza. Since I had it on hand, I decided to see what I could do with it outside of the standard slicing and serving with roma tomatoes and basil (though I'd have gone to that in a heartbeat because, well, YUM!). What I found was a great recipe that's quick and really flavorful - something that can be a challenge with fresh mozzarella.
So join me as this:

First, you'll want to get your oven ready - rack in the middle and temperature at 475. Line a baking sheet with aluminum foil.
While the oven is heating, open up 3 regular sized (14.5 oz) cans of diced tomatoes. Drain these in a colander and squeeze excess moisture out by hand. Remove to bowl.
Add 1 1/2 tsp light brown sugar, 1/4 tsp salt, and 1 TBSP olive oil to tomatoes. Mix to combine.
Spread the tomatoes out in a single layer over the prepared baking sheet.
Roast until significantly reduced in size and darkened in color - about 22 to 25 minutes. Remove to bowl and add 3 scallions (green onions) sliced thin on the bias (diagonally) and 8 ounces of fresh mozzarella, cut up into 1/2 inch cubes. Mix. The cheese won't melt all the way.
While the tomatoes are roasting, toward the end of the process, prepare 1 1/2 cups polenta according to package directions
Stir 2 TBSP unsalted butter into finished polenta
Spoon polenta into shallow soup bowls and top with tomato cheese mixture.
