It's been a busy day. I was going to write something snarky, and then I had to deal with This diary in which I suggested that Bill in Portland Maine should run for Senate. Boy, is he pissed off. He's going to be a formidable pool partner on Saturday. I just got the text that he "wishes to see me" at the pool-hall. I'm in total trouble. ;) There goes my bid for St. George Selectman. Probably will keep me off the Vestry, too. Goodness knows what they will say at the Grange.

So I was going to write some snark today but no, I'm not going to. I got sucked in to a very political diary which included issues around Mormon anti semitism and what happened? Recipes. Now I don't want to get all up on Asimbagirl's business but there are a couple I'd like to share. Just think of me trolling my own diary, old-school:
Commonmass' Frenchified Chopped Liver:
Take a bucket of chicken livers and poach them gently in water adding a smashed clove of garlic, a bay leaf and some thyme. Cook them until just done.
Take the livers and put them in the bowl of your food processor. Add one chopped shallot, a little chopped parsley, some chicken schmalz (or butter, if you're not keeping Kosher or better, goose fat)--about four tablespoons--and blend. Then, blend in three tablespoons each of port wine and brandy. Add salt and pepper to taste. Finish with a tablespoon of truffle-infused olive oil.
This will keep in the fridge for weeks (because of the booze). It's absolutely delicious.
Gravlax:
Get a side of salmon. Make sure you get any bones out, tweezers help. Put it in a glass casserole and rub with a handfull each of Kosher salt and sugar and about two tablespoons worth of black pepper cracked in a mortar and pestle. Put some fresh dill sprigs on top and wrap in waxed paper. Weight it all down with a heavy Dutch oven lid. Put it in a cold place, or in the fridge. Turn it over once a day for three days. On the fourth day, it will be ready to eat. Slice thin with a sharp chef's knife. Capers can be added, if you like.
If you like cured salmon, you can't beat this on a bagel with cream cheese. I eat it just on its own.
Then, of course, is Baba Derenik's recipe for dumplings. That I will keep to myself and my house-guests. (If you search Daily Kos, you'll find it!).
