4 to 5 Irish Potatoes
1 Bell Pepper, cut small
1 small Onion, chopped
1 small jar Pimento, including Juice
1/2 stick Butter, melted
1 Tablespoon Flour
1 cup Milk
1/2 roll Garlic Cheese, cubed
1/2 roll Jalapeno Cheese, cubed
Salt and Pepper, to taste.
Boil potatoes in skins. Slice into 1/2 inch pieces. Layer in buttered
casserole dish. Mix pepper, onion, pimento, melted butter and flour. Stir until
blended. Gradually add milk, then add cubed cheeses. Pour mixture over
potatoes. Bake at 350F for 45 minutes.
