A beautiful warm fall afternoon in IA. I just finished voting early.
Thinking fish maybe tonight. This is a fairly low fat recipe.
Ingredients:
2-1/2 lbs. haddock, shrimp, lobster or combination
1/2 lb. mushrooms,sliced
1/4 C. butter,divided
2 T. flour
1-1/4 C. milk
1/2 lb yellow American or cheese of your choice, shredded
salt and pepper to taste
4 T. (1/4 C.) dry sherry
1/2 C. bread crumbs
Directions:
Cook fish in small amt. of water until it begins to flake,approx. 8-10 min.
Shrimp or lobster should only be cooked for 2 mins.
Flake fish into large pieces.
Saute mushrooms in 2 T. butter.
In another saucepan,melt 2 T. butter and whisk in flour until smooth.
Add milk gradually,stirring constantly till thickened.
Add cheese and continue cooking until cheese melts,stirring to blend well. Add salt and pepper or white pepper,if desired.
Add sherry,mushrooms and fish.
Place in a greased casserole and top wit bread crumbs.
Bake at 300 for 20 mins.
