6 bell peppers
1 cup instant rice
1 can dark-red kidney beans, drained
1 can salt-free whole kernel corn, undrained
1 pkg. low-sodium taco seasoning mix
Clean and blanch peppers for 5 minutes. Cool peppers and place in baking dish sprayed with cooking spray.
Prepare rice as directed on package. Combine drained beans, corn, rice and taco seasoning mix in a skillet; heat thoroughly until thickened. Stuff peppers with mixture and bake at 350 degrees for 20 minutes or until hot.
