Good morning GUStriathaloners!!!!! If I didn't spell that correctly -- then you should be ashamed of yourselves that you noticed at this hour. Also, I have to get to the post office to mail something, something to flumpty -- before the litter and water and food get stale and smelly.
I'm looking for recipes that reflect my new Elle McPhereson body (ok, Rosie O'Donnell, but close). I'll be up at 4:45 now because I realized today, which is now yesterday, that I have to have 3 hours to get to and through the Y. What's up with that? The Y is only .4 miles from my apartment -- a 5 to 6 minute walk. Sure -- I have to deal with all the hot guys asking me for a date on the way -- but how long is one of my contemptuous snorts in response???

Shrimp with Garlic and Chili Pepper
Ingredients
2 tablespoons olive oil
1/2 fresh red chile, according to size and taste, minced
2 garlic cloves, chopped
1/2 pound unshelled medium shrimp
1/2 cup white wine
Salt, if needed
1 tablespoon chopped parsley leaves
Directions
Pour the olive oil into a wide, heavy-bottomed frying pan. Then add the chile and garlic and, over moderate to low heat, to infuse rather than to color, fry for 2 minutes, stirring all the time. Then turn the heat to high, add the shrimp, and stir-fry them for another 2 minutes or until they turn pink and are just, delicately, cooked; you want the flesh to stay tender. Pour in the white wine and let it bubble up. You don't want a liquid puddle around the shrimp, just enough wine to let the juices ooze into a winy sauce. Another minute or so should do it. Season with the salt, if necessary, and then turn into your bowl and sprinkle with parsley. Eat with some good hunks of baguette. I eat these carapace, head, and all: one of the reasons I designate them for solitary dinner.
If you want, you can add a tablespoonful or so of brandy before throwing in the wine.
gchaucer2's Easy Peasy Angel Hair Summer Recipe
The Farmers' Market has begun here. Early tomatoes are actually not that bad, especially in a quick sauce. I'm still looking for the perfect garlic that isn't crappy grocery store garlic. I have most excellent olive oil but you can build this recipe with a bit of a squeeze of lemon and fresh lemon rind with a good olive oil.
I'm adapting for just me -- one person.
1/8th pound of angel hair pasta (dried)
1 tblsp. or a little less of unsalted butter
2 tblsp. of citrus olive oil (or olive oil -- add a touch of lemon juice and lemon zest)
3 cloves of garlic, chopped
1/4 fresh biggish tomato, sliced then chopped
sprinkle of dried oregano
pinch of kosher salt
hot pepper flakes to taste
torn fresh basil to taste.
Grated parmesan
Boil pasta (add kosher salt to water) till just chewier than al dente.
In a small non-stick frying pan, heat the butter and olive oil (with lemon and zest if needed). Add garlic and saute until just before browning. Add sliced and chopped tomato. Add oregano, salt, hot pepper flakes and stir with spatula letting the tomato sweat out.
When pasta is finished, pull with pasta claw (or drain in colander) and add to the sauce. Stir, and then pour into wide bowl, add parmesan and then fresh torn or chopped basil. Salt and/or pepper for taste.
