Lately I have found myself making many dishes with plenty of butter. My Doctor would frown, but I am pretty sure that something else will "get" me, not my food choices. I do love sautéing with olive oil, but my philosophy of "the closer to the earth, the better the food" makes butter a wholesome choice for me too.
As you can see by Itzl's concerned look, this group is for us to check in at to let people know we are alive, doing OK, and not affected by such things as heat, blizzards, floods, wild fires, hurricanes, tornadoes, power outages, or other such things that could keep us off DKos. It's also so we can find other Kossacks nearby for in-person checks when other methods of communication fail - a buddy system. Members come here to check in. If you're not here, or anywhere else on DKos, and there are adverse conditions in your area (floods, heatwaves, hurricanes, etc.), we and your buddy are going to check up on you. In September, I replaced the stove left behind by the previous owner of this house. It sort-of worked, but it would sporadically adjust the flame higher on it's own, and needed a match to light it. It came from Montgomery Ward, so maybe 30+ years old? It was time.
After the new one was installed and the the technician was gone, I realized there was no broiler pan included, so I called him up and asked him to save for me the old one. He agreed, but, I still don't have it. Not a problem in the summer, everything that I would want to broil tastes better from the grill, so we enjoyed many grilled meals.
But now, with snow on the grill and ice on the stoop, it is time to do that cooking indoors and I still don't have that broiler pan!
My solution so far is to gently pan fry the burgers, steaks, chops and fish. Olive oil just doesn't cut it, it will not enhance the flavor of the meats the way grilling or broiling does, and the bottle needs to be replaced far too often; I save the oil for the fresh veggies.
So, a swirl of butter, a quick sear on both sides, and then turn down the burner until the little steaks were done just right. Remove them from the pan, and add one more pat of butter, turn up the heat to evaporate the cooking liquids and pour the beefy butter sauce on top of the meat. Serve with a big pile of steamed broccoli and a side of delicata squash. Partner thinks the dinner tastes great, and it is all because of two pats of butter for two people.
