Good morning GUSsmarterthanIpeoples!!! Yes, I pushed that exit the interwebz button instead of the one that lets me copy stuff. Gray and gloomy here. I continue for day two in search of my pin cushion. Little asshole, I mean Roger the Cat, yet again has knocked it somewhere. No matter how carefully I hide it -- he finds it.
I still have two sides to finish sewing on the box cushion -- slow going because of the stripes to be matched and the corners with piping near the zipper. Maybe the second one will go faster.
So, my latest endeavor to lose weight seems to be working. Now I just have to find my fitbit charger -- I blame myself. It is somewhere I carelessly stashed it. Widgety things are excellent helps with quitting smoking, eating and other bad stuff. Reminders that you are doing a good job.
While on my search for lost things, I thought it would be a good idea to revise my recipe additions. I'm into chicken because it is inexpensive -- but also fish, which is not.
GUS (Gave Up Smoking) is a community support diary for Kossacks in the midst of quitting smoking. Any supportive comments, suggestions or positive distractions are appreciated. If you are quitting or thinking of quitting, please -- join us! We kindly ask that politics be left out.
You can also click the GUS tag to view all diary posts, or access the GUS Library at dKosopedia for a great list of stop-smoking links. Check it out! GUS library.
A message to ALL quitters. You don't have to avoid GUS if you have a failed quit. We won't give you a bad time and we consider the failed quits as "practice" for the real quit.
Quit Keeper widget which is an outstanding aid for those beginning the difficult path to quitting. It lets you know how long you haven't smoked, how many cigs you haven't smoked, how much money you've saved.
Quit Smoking Counter h/tGDbot. For those of you who have had a problem with Quit Keeper or want a different counter!
While some of us still have grilling season before the next polar vortex, this recipe sounds yummy:
from Saveur
POLLO AL AJILLO (PANAMANIAN GARLIC CHICKEN)
Heavily spiced and intensely garlicky, this charcoal-grilled chicken can be found at roadside restaurants all over Panama, served with rice and fresh avocado.
SERVES 4
Ingredients
1 (3-4-lb.) chicken, quartered
3 bay leaves
25 cloves garlic, peeled !!!!!!!!!!!
2 tsp. kosher salt, plus more to taste
1 cup fresh orange juice
1⁄2 cup sherry vinegar
2 tbsp. freshly ground black pepper
2 tbsp. Worcestershire sauce
2 tbsp. ground allspice
Instructions
Place chicken and bay leaves in a bowl. Purée garlic, salt, and 2 tbsp. water in a food processor to a smooth paste. Add juice, vinegar, black pepper, Worcestershire, and allspice; purée until smooth. Rub mixture over chicken. Cover with plastic wrap and refrigerate at least 4 hours or up to overnight.
Heat a charcoal grill or set a gas grill to high; bank coals or turn burner off on one side. Remove chicken from marinade; grill on hottest part of grill, flipping once, until slightly charred and cooked through, 25-30 minutes, or until an instant-read thermometer inserted into thickest part of thigh reads 165°. If the outside starts to burn before the chicken is fully cooked, move to the cooler side of the grill until done.
Something simpler
Slow Cooker Pulled Pork
INGREDIENTS
1 (15-ounce) can tomato sauce
3 tablespoons chili powder
3 tablespoons light brown sugar
2 teaspoons ground coriander
1 teaspoon ground cumin
1 (3-pound) pork shoulder (or butt), trimmed of excess fat
Kosher salt and freshly cracked black pepper
5 cloves garlic, minced or grated
2 yellow onions, diced
1/4 cup fresh lime juice
DIRECTIONS
Combine the tomato sauce, chili powder, brown sugar, coriander and cumin in the base of your slow cooker. Stir to combine and distribute the spices evenly.
Sprinkle the pork with salt and pepper and place it in the slow cooker. Using tongs, turn the pork to coat it evenly in the sauce. Add in the garlic and onions, stir again. Place the lid on the slow cooker and cook until the pork is tender and beginning to fall apart, on low 8 to 10 hours or on high 4 to 6 hours.
Transfer the pork to a serving bowl. Allow to cool slightly, and then shred using 2 forks, removing any excess fat.
Skim any excess fat off of the sauce remaining in the slow cooker. Stir in the lime juice and season with salt and pepper. Add the shredded pork back into the slow cooker and mix it with the sauce that was created during the cooking. You can store the pork in its sauce for 3 to 4 days.
