This is my first time writing the “What's for Dinner “ column. That's why I refer to myself as a newbie. I know I've made many comments on this column before.
I love food. I love to eat tasty food, I love to cook and I even love to grow it. I've even altered recipes to either use up what I have on hand, to fit my diet (no beef or pork) or to use stuff that I've gotten an overabundance, from the garden.
The salad pictured above was titled with having six ingredients. I didn't look up the exact ingredients or the exact amounts but I could see from the original photo, it had cannelli beans, sliced grape tomatoes and basil. I was off and running. I got two cans of beans out and dumped the rinsed beans, into a Tupperware bowl. I sliced a red onion, first into quarters, then slices, so that they weren't too big. I took some of the red peppers from the garden and sliced them into thin strips. I then took a handful of basil and it was thin strips again. Since it was what I consider Itailian, I added a finely minced cove of garlic and plenty of freshly ground black pepper. Just before serving, I topped it off with some bottled Italian salad dressing. It made a great lunch. I plan on using this during future summertime lunches.
Now, the to half of this diary I wrote soon after I signed up to do this diary. Now today, hubby and I were gifted with a glorious day. We went over to Lawrence and caught some estate and garage sales. Then we went to the Pilot Club’s antique show. (Had a wonderful lunch there, with a homemade chicken salad sandwich and chips (me) and hubby had a Mexican influenced dish that had hamburger in it. They make their desserts from scratch and we shared the strawberry rhubarb pie and the chocolate cheesecake.
After the sale, we hopped up the street and stopped in to their Humane Society. I can say my hubby bought me a Frosty.
Tonight’s dinner will be leftover Turkey Stroganoff and if I get out to the garden to pick the, green beans with red bell peppers and some onion.
1 onion, diced
1 lb. ground turkey or beef, your choice
1 can Golden mushroom soup
1 cup sour cream
1 12 oz. package egg noodle -I use whole wheat
1 -8 oz. package sliced mushrooms, if desired
Cook noodles and drain. While they're draining, I use the same pan and fry the onions, mushrooms and meat. Once browned and drained, if beef, add the soup and sour cream. After heated, add the noodles and let noodles heat up a little.
