Happy Friday night. On the table tonight is Mozzarella Garlic Bread. This bread is so good that it can be used to actually elect better democrats!
For this bread you need to order a loaf at your local bakery. The bread featured in the pictures below is a 12" round. I usually pick up the bread the same day that I will be baking it but this recipe can be made the day before you need it.
I especially like to serve this bread with Eggplant Rollatini.

The first thing to do is take the loaf of bread and place it in the freezer for about 20 minutes. This makes it a little easier to cut. While is is in there, peel and mince a whole head of garlic. Add this to one stick of room temp butter and mash it all up. Add a little Parmesan cheese, some Parsley and a dash of Red Pepper to the mix.
Next, take a large Mozzerella cheese and mince it up in a food processor or a small chopper. I like it really fluffy so I put it in my little electric chopper.
Next, take the bread out of the freezer. Slice it round into 6 or seven pieces.
Starting with the bottom layer, spread a layer of garlic butter. Add a 6th of the cheese on top. Continue layering the bread doing the same to each layer. Save some of the garlic spread for the outside of the bread.
Once the loaf is put together, take the rest of the garlic spread and using your hands, coat the entire outside of the bread. Next, cut the bread as shown in the picture. The reason why I cut the bread into pieces is because it cooks better and it is easier than cutting it before you serve it.
Once completed, wrap the bread up in tin foil. You can refrigerate it until you are ready to serve it. Even the day before you need it.
Bake at 325 degrees for 35 minutes. Enjoy!
