I needed something easy to go with sausage for dinner tonight, since the rest of my family was having pasta. As a Type-2 diabetic who controls blood sugar via a low-carb (for me, <30g net carbs per day), high-fat ketogenic diet, pasta is NOT on my menu. I had the ketogenic staples cheese, eggs cauliflower in the fridge. So I fell back on a favorite recipe from the website Gimme Delicious Food, which I have nicknamed Keto Cheesy Cauliflower Bites. First, preheat your oven to 375F and gather your ingredients:
Ingredients are simple: One head cauliflower (or 6 cups frozen) cut into florets, 3 eggs, and 3 cups shredded cheddar cheese. I used Basil and Garlic Powder (1.5tsp each) but you can add whatever else you want for seasoning! Orange cheese makes the finished product less bland-colored but doesn’t affect taste.
The hardest part of the entire recipe is prepping the cauliflower. Only three steps! If you can squeeze water out of wet things, you can do this!
Steam or microwave cauliflower florets until tender. Drain well as this makes the next parts easier. Place into food processor and pulse several times until it looks like rice (you also can chop into small pieces with a knife).
Place a clean dry dishtowel in a container and pour the riced cauliflower in. Wrap the sides together and twist to strain out as much liquid as you can get out.
I removed about a cup of liquid. The drier you get it, the better your Bites will be. Dump the squeezed riced cauliflower into a large bowl.
Mix the drained riced cauliflower with the cheese, lightly beaten eggs and seasonings until well-combined. Grab a minimuffin tin (it should work with a regular muffin tin with adjusted cook times) and grease lightly if not nonstick.
Fill each about 2/3 full or use a 1" meatball/cookie scoop. Press down with spoon or they won't hold together after cooking. The left are fresh-scooped, the right are pressed into the tin.
Place into oven and bake 375F for 12-15 minutes or until the top & edges are browned. Remove from oven and cool for at least 5 minutes before removing from pan. I use a plastic knife to loosen from edge, then they pop right out.
I eat them straight but the recipe originally suggests serving with your favorite dipping sauce (I know marinara sauce is a traditional tasty pairing). I’ve also made these with crumbled crispy bacon bits added when I mixed the cheese in because really, everything is better with bacon! You can make them your own!
How are the numbers? In my hands this recipe serves 6; I usually get about 72 Bites and a generous gee-I’m-really-hungry serving is 12 nuggets of goodness. That roughly works out to 300 calories, 22g fat, 19g protein, and 6.4g total carbs (4.2g net carbs once 2.2g fiber is subtracted).
The highest form of praise I can hear on a recipe I make that isn’t “standard non-keto regular people food” is “whoa, that’s good. I’ll eat that!”. I made this for an appetizer at a church event and they were the first item gone on the table.
