Hope everyone had a lovely St Patrick’s Day. The coincidence of St Paddy’s and a Saturday night has probably bought a few boats for bar owners this year. Not as much for the traditions of this day. Today is the feast day of a lesser known Irish Saint, Seamus the patron saint of cures for the hangover. Traditional foods of the day are poutine, anything from Taco Bell, and pancakes. Basically anything carbo loaded and greasy. Also, Seamus was famous for his work with dogs thus the saying “hair of the dog” for hangover drinking.
But first, a word from our sponsors ...

You want to hear some crazy ass shit? There was a bomb threat that canceled a SXSW performance headlined by The Roots in Austin, TX last night. Not exactly very festive, huh? At least the police have a suspect in custody who has been charged with the 3rd degree felony of making a terroristic threat. Questlove, famously afroed drummer for the band said that no one was more “Mr Show Must Go On” than he was but that no performance was worth risking his life.
And now, Martha Stewart’s corned beef and cabbage recipe. Note how simple the directions from the queen of elaboration.
In a 5-to-6-quart slow cooker, place celery, carrots, onion, potatoes, and thyme. Place corned beef, fat side up, on top of vegetables and sprinkle with pickling spice; add enough water to almost cover meat (4 to 6 cups).
Cover and cook on high until corned beef is tender, 4 1/4 hours (or 8 1/2 hours on low). Arrange cabbage over corned beef, cover, and continue cooking until cabbage is tender, 45 minutes (or 1 1/2 hours on low).
Thinly slice corned beef against the grain and serve with vegetables, cooking liquid, and grainy mustard.
And now the best reason to celebrate St Seamus’ Day… Corned Beef Hash!
Makes 4 servings
TOTAL TIME
45 minutes
INGREDIENTS
-
- 1 lb baking (russet) potatoes, peeled and cut into 1/4-inch dice
- 1-lb piece cooked corned beef, cut into chunks
- 1 cup chopped onion
- 1 large red bell pepper, cut into 1/4-inch pieces
- 2 tablespoons unsalted butter
- 1/4 cup heavy cream
- 4 large eggs (optional)
- 1 tablespoon chopped fresh flat-leaf parsley
PREPARATION
-
- Cook potatoes in boiling salted water to cover until just tender, about 3 minutes, then drain. Pulse corned beef in a food processor until coarsely chopped.
- Sauté onion and bell pepper in butter in a 12-inch nonstick skillet over moderately high heat, stirring, until lightly browned, about 5 minutes. Add potatoes and sauté over moderately high heat, stirring occasionally, until browned, about 5 minutes. Stir in corned beef and salt and pepper to taste, then cook, stirring occasionally, until browned. Add cream and cook, stirring, 1 minute.
- If desired, make 4 holes in hash and break 1 egg into each. Cook over moderately low heat, covered, 5 minutes, or until eggs are cooked to desired doneness, and season with salt and pepper. Sprinkle hash with parsley.
I would do more but I’m hung over and tired. Hope everyone enjoyed the weekend and got home safely. Be well. And please stay away from the green beer tomorrow. There is no longer any reason to believe that it is a St Patrick’s gimmick beyond tonight. For another year think of green beer as green eggs and ham. Just say no, Sam I Am.
Brillig's ObDisclaimer: The decision to publish each nomination lies with the evening's Diarist and/or Comment Formatter. My evenings at the helm, I try reeeeallllyy hard to publish everything without regard to content. I really do, even when I disagree personally with any given nomination. "TopCommentness" lies in the eyes of the nominator and of you, the reader - I leave the decision to you. I do not publish self-nominations (ie your own comments) and if I ruled the world, we'd all build community, supporting and uplifting instead of tearing our fellow Kossacks down.

In dweb8231’s reclisted diary, about the Cambridge Analytica dirty doings, this comment by Super390 makes a really important point about how election information is no longer one-to-many, as in candidate to public, but now can be and has in fact been tailored individually to people on Facebook, in Britain (Brexit) as well as here (2016 election), with continuing applicability in whatever ways and on whatever media platforms it can be made to apply.

I'd like to nominate the following comment by Captain Frogbert on the "I believed him" thread by Laura Clawson. I just think it's spot on and something I have tried to say myself many times.
